Carrot Cake with Lemon Frosting

Serve a juicy carrot cake with lemon frosting this Easter!

Ingredients

3 dl all-purpose flour

1 tsp baking powder

1 tsp baking soda

3 tsp cinnamon

½ tsp JOZO fine salt

3 eggs

3 dl sugar

3 dl grated carrots

1 dl canola oil

Frosting

300 g cream cheese

100 g soft butter

3 dl powdered sugar

1 tsp lemon juice

Zest from 1 lemon

Instructions

Preheat oven to 175°C (350°F).

Beat eggs and sugar until fluffy, stir in carrots and oil.

Mix dry ingredients separately and fold into egg mixture.

Pour into a greased springform and bake for 40 minutes. Cool completely.

Whisk frosting ingredients (except zest) until fluffy.

Spread on cake and top with zest.

Butter, honey and dates melted with biscuits and walnuts, pressed into a tin, topped with coconut‑honey frosting, then sprinkled with walnuts and Himalayan salt.
